(1) roast rice til golden brown
(2) wash and steep in water overnight
(3) wash and drain. add water and cook
1 cup rice = 1/2 cup water or 1 cup rice = 3 cups water
(4) cool rice, spread out on a tray
(5) prepare powdered yeast
(6) mix yeast with rice
3 tbsp = 1 cup uncooked rice
(7) store in tall ceramic jar sealed tight.
(8) ferment for 2-3 weeks; up to 6 months
(9) filter and store in sterilized bottles.
